Cao Bang cuisine - the flavour of mountain, river and forest

(TITC) - The cuisine of Cao Bang Province (North Vietnam) is rich, diverse, harmonious and delicate, creating a distinct impression in the minds of tourists. Going with the flow of the general trend of tourism development, Cao Bang cuisine promises to be an attractive tourism product for tourists.

Cao Bang is a land favoured by nature for suitable climate and soil, so it has formed areas of raw materials and specialty plants such as: edible canna vermicelli of Phja Den (Nguyen Binh District); pears, black jelly tree (Thach An District); chestnut, Mac Pup white jelly (Trung Khanh District); blood plum tree (Bao Lac District); Giao Co Lam Tea, red tuber fleeceflower; Xom Deng tree; Phjac Chac tree,… Additionally, Cao Bang is also famous as a culinary paradise with extremely unique dishes such as: banh cuon (steamed rice rolls), sour Pho, duck Pho, coong phu cake, khao cake (sweet short cake made of roast glutinous rice flour), che lam (Vietnamese nutty ginger sticky rice bar), roasted duck with 7 flavours, and roasted suckling pig, ap chao cake, ant egg cake, ant egg sticky rice, five-colour sticky rice, black canarium sticky rice, black jelly, white jelly, Xom Deng jelly, … Those dishes have captured the heart of tourists who want to experience the cuisine of Cao Bang.

Since its unique culinary culture, Cao Bang has had fruits and many specialty dishes honoured by the Vietnam Record Association such as: Dong Khe Pear in Top 50 most famous fruits in Vietnam in 2012; black canarium sticky rice, coong phu cake are among the "Top 100 Vietnamese specialties" in 2020 - 2021; Trung Khanh Chestnut in “Top 100 Vietnamese gift specialties” in 2020 - 2021; banh cuon (Steamed rice rolls); ap chao cake in the "Top 100 Vietnamese specialties" in 2021 - 2022; Phja Den edible canna vermicelli and che lam (Vietnamese nutty ginger sticky rice bar) in the "Top 100 Vietnamese gift specialties" in 2021 - 2022… Many Cao Bang specialties have achieved 3-star OCOP certification in the programme of one commune one product, such as: Bao Lac sticky rice; bacon; sausages; edible canna vermicelli; black jelly; Ha Lang mooncake; khẩu sli Nà Giàng (cake made from popcorn rice with icing sugar); A1 Black tea; A2 Green tea; Giao Co Lam tea; CP 999 corn wine; Khau Nang wine… and many more.

In 2022, Cao Bang organised Tourism Culinary Innovation Contest "Non Nuoc delicacies" in Cao Bang Province aims to position the tourism brand from culinary, at the same time, looking for unique and typical dishes to gradually form a culinary tourism map of Cao Bang in the future. With the success of the first contest in 2022, Cao Bang Province decided to organise the contest as an annual tourism activity that promises to create a diverse and rich culinary space for visitors to Cao Bang.
